Onion Fritters (Bhajas)

Ingredients:

(The same batter may be used with a variety of vegetables cut into bite sizes).

  • 225 grams of besan flour,

  • 1/2 teaspoon chilli powder,

  • 1 teaspoon turmeric powder,

  • 1 teaspoon baking powder,

  • Salt to taste,

  • 1/2 teaspoon cumin seeds coarsely crushed,

  • 2 large onions finely sliced,

  • 2 green chillies finely chopped,

  • 2 tablespoons chopped coriander leaves,

  • Vegetable oil for deep frying

Method:

  1. In a bowl, mix together the flour, chilli, turmeric, baking powder and salt to taste.

  2. Add the coarsely crushed cumin seeds, onion, green chillies and coriander leaves. Toss together well.

  3. Very gradually mix in enough cold water to make a thick batter surrounding all all the ingredients.

  4. Heat enough oil in a wok or similar deep frying pan.

  5. Drop spoonfuls of the mixture into the hot oil and fry until golden brown. Leave enough space to turn the fritters. Drain well and serve hot. (Alternatively, dip vegetable pieces into batter for coating before frying in oil).
