Salmon Patties

Croquettes de Saumon

Ingredients:

  • 415 grams of canned 
    red salmon

  • 1 cup mashed potatoes 
    (500 grams potatoes)

  • 1 teaspoon finely grated lemon rind

  • 1 small onion finely chopped

  • 3 tablespoons milk

  • 2 tablespoons chopped parsley

  • 1 egg white

  • breadcrumbs for coating

  • oil for frying

 

Method:

  1. Peel and cube the potatoes. In a microwave safe container, put in the cubed potatoes, pour in the liquid from the canned salmon, cover and cook the potatoes in the microwave on high for 10-15 minutes or until the potato cubes are cooked and ready to be mashed. Allow to cool. Mash the potato cubes to a smooth consistency.

  2. Finely flake the red salmon into small pieces. Not too big, not too small.

  3. Combine the potato cubes with the milk, grated lemon rind, chopped parsley, finely chopped onion and the egg white. Mix well together. Add the red salmon pieces and combine well without mashing the salmon. Shape mixture into 8 patties and coat with the breadcrumbs. Refrigerate for 30 minutes to let them set.

  4. Grill or pan fry until golden brown and heated through. Brush off excess breadcrumbs before frying in pan.

  5. Serve with chilli sauce. Excellent appetiser (gajack) with drinks.
