(The same
batter may be used with a variety of vegetables cut into bite
sizes).
Method:
In a bowl, mix together
the flour, chilli, turmeric, baking powder and salt to taste.
Add the coarsely
crushed cumin seeds, onion, green chillies and coriander leaves. Toss
together well. You can omit the onions if you want plain bhajas.
Very gradually mix in
enough cold water to make a thick batter surrounding all all the
ingredients.
Heat enough oil in a
wok or similar deep frying pan.
Drop spoonfuls of the
mixture into the hot oil and fry until golden brown. Leave enough
space to turn the fritters. Drain well and serve hot. (Alternatively,
dip vegetable pieces into batter for coating before frying in oil).
