Cut off the wing tips and separate the whole chicken wing at
the joint with a sharp knife into two pieces. Remove any traces of
feather and bits that you don't like.
Mix the honey, light soy sauce, lemon juice, crushed garlic and
ginger in a large bowl. Mix well together.
Add the chicken wing pieces into the marinade. Cover and allow to
marinade in the fridge for at least one hour. Overnight is best. Turn
chicken pieces around at least once or twice.
Heat up oven at 190 degrees C. Place chicken pieces on a
grill in an oven tray. Baste with remaining marinade. Put oven tray in
mid position into oven. Allow to cook for 1 hour or until the chicken
pieces are cooked and the marinade has turned into a sticky glaze.
Rotate chicken pieces in tray at least once or twice during the cooking.
Monitor at regular intervals to avoid overcooking the chicken pieces
Remove chicken pieces from oven. Transfer to a warmed serving dish
and serve immediately, with either a chilli or garlic sauce.
