Shell and de-vein the prawns.
Season the prawns with the dry sherry, salt and pepper to taste. Allow
to marinate for 10-15 minutes. Prepare the
mayonnaise-refer to
recipe
index or buy ready made.
In a frying pan over medium high
heat, put 1 tablespoon oil and 1 tablespoon butter. Stir fry the prawns
until just cooked. Remove from pan and place over kitchen paper to drain
surplus oil and butter.
Remove the avocado flesh and mash
gently. Add the juice from 1 lemon and mix well in, to prevent the
avocado mash from turning brown. Mix in the mayonnaise. Keep 1 cooked
prawn whole for each serve. Quarter the remaining
prawns and add to the avocado / mayonnaise mixture. Mix well without
mashing the prawns.
Serve the avocado / prawn mixture
onto serving plates. Top each serve with one prawn each.
